Dressing...
1/3 cup olive or walnut oil
1 tablespoon fresh lemon juice
3 tablespoons of herb vinegar (Thyme, Rosemary, and Chives)
1/4 cup chopped fresh parsley
2 teaspoons granulated sugar
1/2 teaspoon chopped fresh basil
1/8 teaspoon crushed garlic
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4 cup red table wine
Salad...
10 to 12 ounces fresh mushrooms, cleaned and sliced
5 ounces fresh arugula or greens of your choosing
Making the Dressing
Combine all ingredients for the dressing in a blender or bullet juicer and blend until smooth and emulsified.
Making the Salad
Arrange arugula on a plate or bowl. Arrange sliced mushrooms atop the greens. Dress amply with the dressing.
