4 or 5 large apples, any variety
1.5 cups all-purpose flour
2 large eggs, separated
1/2 cup milk
1 tbsp. butter, melted
1 tbsp. fresh lemon juice and 1 tbsp lemon zest
1 tsp. baking powder
1/4 tsp salt
1/4 cup granulated sugar
1 tsp. cinnamon
2 cups vegetable oil (high smoke point)
Confectioner’s sugar
Making the Fritters
Peel and core the apples.
Slice the apples into rings 1/4” to 1/2” thick.
Dredge rings in 1/2 cup flour. Set aside while you make the batter.
Whip the egg yolks in a large mixing bowl until light yellow.
Whisk water, butter, lemon juice, and lemon zest into eggs.
Sift and blend baking powder, salt, sugar, cinnamon, and remaining flour into egg yolk mixture.
Beat egg whites until stiff and fold into batter.
Heat the oil in a large, heavy skillet or fryer to 375 deg F.
Dip apple slices into the batter, covering them completely.
Drop battered apples into the hot oil. Fry two minutes on each side until golden brown.
Drain the fritters on paper towels and then sprinkle with confectioner’s sugar.
