1 cup white vinegar
1 cup cider vinegar
1/2 tablespoon granulated sugar
a small handful of whatever combination of fresh (or dry) herbs might be called for or desired
Wash the fresh herbs and put into a jar with a lid.
Pour the vinegars into a saucepan.
Add the sugar to the vinegar.
Bring the vinegars and sugar to a boil.
Once boiled, pour the vinegars into the jar over the herbs.
Close the jar tightly, shake slightly to mix the herbs and vinegar well.
Allow to cool to room temperature and store for use.
Making several varieties of herbed vinegar will produce a selection for use in recipes.
